With a teeny bit of cold kicking into my system, I’ve decided to whip up an immune-boosting, nutritional powerhouse, heart- warming dish containing mixed berries, fat-free Greek Yogurt and raw rolled oats.
Benefits? Berries are packed with antioxidants, fiber, vitamin C, potassium, and folate. Greek Yogurt containing “live and active cultures” and Vitamin-D , may help stimulate your immune system to fight disease. I have purchased the “FAGE” 0% fat-free Greek yogurt brand for its thickness and packed with probiotics as well as 28grams of protein. And finally, oats are high in several minerals, including calcium, iron, magnesium, phosphorous, potassium and manganese while keeping your digestive tract clean and satiated!
Now onto the good stuff…
BERRY COMPOTE
Bag of frozen mixed berries (Purchased mine from Carrefour – 206 kcal total in one box)
1 tsp of orange juice or lemon juice
1/2 cup caster sugar or 1/4th cup stevia (sugar replacement)
Ground Spices of your favorite: (1/2 tsp of ginger / cardamom / cinnamon )
1 tb vanilla essence or almond essence….or go half and half!
Make the Berry Compote by combining frozen berries, orange juice and your favorite ground spices. Cook for approximately 5minutes (or until the mixture bubbles and becomes syrupy), stirring occasionally. Reduce heat to low.
GRANOLA MIX
1 cup Jumbo rolled oats
Handful or two of crushed slivered almonds
2tb honey
Spray a non-stick cooking spray on a pan and set it on medium heat. Stir the Granola mix well in the bowl first before adding into the pan. KEEP stirring so the honey doesn’t burn for about 5 minutes until it turns golden crispy brown.
Layer your serving bowl with greek yogurt at the base topped with the warm berries compote and granola mix. Drizzle with Maple Syrup if you feel the need to sweeten it up!
You can later reheat the berry compote easily for your next serving!
