Golden Zoodles with Delicious Pesto & Mushrooms!


Zoodles with Pesto - Yellow Courgette


1 large zucchini [I chose yellow for a change!]
Your favorite pesto sauce
Chopped white button mushrooms


1. Use a Gefu Spirelli to spiralize the zucchini into noodles in a big bowl.

2. Combine the zucchini noodles and pesto. Toss until zucchini noodles are well coated. Top with chopped mushrooms, if using. Serve at room temperature or chilled.

For a warmer version – toss the zucchini noodles in a warm pan for a few minutes with the mushrooms. Add the pesto sauce afterwards to avoid a watery bowl. Eat straight away and cheers to more weight on the lips, less on the hips!

Zoodles with Tuscan Kale and Mozzarella


Represent, Zoodles (One Spiralized Zucchini) tossed with a tablespoon of warm pesto sauce, shredded mozzarella and fresh Tuscan Kale leaves, juicy cherry tomatoes with a splash of lime for zest. Whipped this up under 5 minutes and one of my favorite ways to lunch over a big bowl of yummy goodness without the heavy-carbs from pasta!

That Was A Delicious Rawsome Buddha Bowl by Essentially UAE!


After a long day practicing yoga under the glorious sun at XYoga Dubai festival this weekend, I couldn’t have asked for a more refreshing drink! Zoodles with Calamari tossed in Rosemary, Feta & Marinara sauce!



Lunch consisted of spiralizing 1 large Zucchini, tossing it into a pan of lightly sauteed calamari rings in a non-stick pan with chunky marinara sauce, a dash of sour cream, dried rosemary sprinkles and crumbled light feta cheese. Speedy. Low carb. Low in calories. Rich in protein and magnesium. And simply, delicious – sans the heavy carb inducing coma.

Spiralized Zucchini & Beetroot Rolls with a twist!



Sushi rolls without the rice? It is totally doable when you are armed with a Gefu Spirelli, a large Zucchini and Shredded Beets. Less carbs, tons of crunch, heaps of flavor, iron rich and your sushi craving is satisfied. Got your sharp knife, bamboo mat and food ingredients ready?

Serving : 1 VERY hungry mouth.

1 large spiralized Zucchini
2 generous handful of shredded beets (buy the pre-packaged shredded beets from Carrefour or Choitrams supermarket)
5 Nori Seaweed Sheets (Japanese Choice from Choitrams)
Tamari Sauce or Low Sodium Soy Sauce

To Dip Into:
Mix of low fat yogurt pot with tamari sauce, fresh ginger paste, teaspoon of wasabi paste and squirt of lemon zest. Get creative!

Place a nori sheet ontop your bamboo mat and a handful of the spiralized zucchini + shredded beets on the nori sheet. Make sure to leave a good gap uncovered at top and bottom of the nori.

Moisten top edge of the nori with water then roll the bamboo mat tightly towards the moist edge to seal the roll.

Slowly remove the bamboo mat from the sushi roll.

Moisten a sharp knife and slice the rolls into generous mouthful-sized pieces and serve with the dip mix!

The benefits of Collard are endless but mainly act as a great substitute to bread (low carb & low calorie), a delicious alternative to kale and cabbage, packed with tremendous dose of nutrients and especially powerful in minimizing your risk against certain cancers while lowering the level of oxidative stress on your cells. In a nutshell, substituting your tortilla wraps with collard greens is one heck of a smart idea and tastes delicious as you can fill it with whatever your taste buds desire.
